1 1/2 c. whole wheat flour
3/4 c. flax seed meal
3/4 c. oats (not instant)
1 c. brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. shredded carrots
2 apples peeled and shredded (or not peeled)
1/2 c. raisins
1 c. chopped nuts (optional)
3/4 c. milk
2 eggs
1 tsp. vanilla
1/4 tsp. ground ginger (optional)

Directions:
Directions:
Preheat oven to 350. Mix all dry ingredients. Stir in carrots, apples and raisins. Combine wet ingredients and add to above mix. Line muffin tin with paper cups. Bake at 350 degrees for 20-25 minutes (or longer) until done.
