2 c. whole wheat flour
2 tsp. baking soda
1 stick unsalted butter (plus more for the pans)
1/4 c. sugar/splenda blend
8 oz. unsweetened apple sauce
2 tsp. cinnamon 1 t. ginger
pinch of nutmeg
2 tsp. vanilla
2 large eggs
1 c. dark or golden raisins
chopped pecans (to taste)

Directions:
Directions:
Heat oven to 350 degrees. Butter two 8 inch, round cake pans. In a small bowl, combine the flour and baking soda. In a separate bowl, melt the butter and stir in the sugar, applesauce, cinnamon, ginger, nutmeg, vanilla and eggs. Add the flour mixture and stir until just combined. Stir in raisins and pecans. Pour into the prepared pans. Bake for around 35-40 minutes.
