1 c rice
Rice Pudding:
1 quart milk
1 c sugar
3 tbsp cornstarch
3 whole eggs
3 egg yolks
1 tsp vanilla

Meringue:
3 egg whites
1/4 tsp cream of tartar
6 tbsp sugar
1/8 tsp salt
1/4 tsp vanilla

Directions:
Pudding: Cook 1 cup of rice until done. Add milk, let come to a boil and cook 5 minutes. Stir so it won't burn (a heavy kettle helps). Remove from heat. Mix together with hand mixer sugar, cornstarch, whole eggs, egg yolks, and 1 vanilla; Add to rice and milk mixture and cook gently until thickened. Pour into casserole dish.

Meringue: Combine egg whites with cream of tartar. Beat until soft peaks form. Beat in gradually sugar, salt and vanilla. Top casserole with meringue and bake 15 minutes at 350º or until meringue is slightly browned.
