Mother in Law's Lemon Tart.

1 packet marie biscuits crushed
60g Margarine melted

5 ml gelatin
100ml water
75ml lemon juice
4 eggs separated
210 g caster sugar
Pinch salt
2ml lemon peel grated
125ml cream

Directions:
Directions:
Mix crumbs with melted butter, press into pie dish and rest in fridge until needed
Soak gelatin in half the water, beat remaining water lemon juice egg yellow, half the sugar and salt in a heavy bottomed pan until well mixed.
Heat over low heat and stir continuously until it starts to thicken.
Remove from stove, add gelatins and mix well.
Let cool.
Beat egg white until nearly stiff, add remaining sugar bit by bit, add the peel, then add this to the egg mixture.
Spoon into crust immediately, place in fridge to cool.
Decorate with whipped cream if so desired..
