1/2 cup oil
1 stick butter
2 cups sugar
5 eggs separated
2 cups flour sifted
1 tsp soda
1 cup buttermilk
1 tsp vanilla
1 small can coconut
1 cup pecans

FROSTING:
8 oz cream cheese
1 stick butter
1 box powdered sugar
1/2 cup pecans
1 tsp vanilla

Directions:
Directions:
Cream butter and oil. Add sugar egg yolks and soda. Mix well. Add flour and milk alternately. Mix well. Add coconut, vanilla, nuts. Mix well. Fold in stiffly beaten egg whites.

Bake 350º for 45 - 50 minutes.

Use 3 round layer pans.

This is a delicious cake that was shared by my friend Catherine. Our friendship started in 1965 when we moved to Nashville right out of college and has continued to this day!
