4 large potatoes
1/2 cup butter
1/2 cup milk
1/2 cup shredded mozzarella cheese
1/2 cup shredded yellow cheddar cheese
paprika
salt
pepper

Directions:
Directions:
Prick and bake potatoes for 1 hour at 375º, then slice in half.

Scoop out the potatoes leaving a 1/8" of potato in the potato skin to help it stay sturdy.

In a large bowl mash together the potatoes, milk and butter. Stir in the mozzarella cheese. Season with salt and pepper to taste.

Spoon the potato mixture into the skins and top with the cheddar cheese. Garnish with a sprinkle of paprika, if desired.

Bake for 20 minutes at 350º for 20 minutes and serve hot.

These can be done up ahead of time. Instead of baking for the additional 20 minutes, cover with aluminum foil and refrigerate. When you're ready to bake them, leave the tinfoil on for 15 minutes so the potatoes heat through, then bake uncovered for an additional 10-15 or until the potatoes are hot and the cheese is melted.
This is my mother's recipe and we just can't get enough of these delicious potatoes!
