1/2 cup butter
1 medium onion chopped
1 (14 oz) can artichoke hearts
2 (10 oz) packages for frozen spinach
1 (8 oz) package of cream cheese
1 (8 oz) package sour cream
2 tablespoons Tabasco sauce
3/4 cup shredded Monterey jack cheese
3/4 cup grated Parmesan cheese
Salt and Pepper

Directions:
Preheat oven to 350, melt butter in LARGE sauce pan, add chopped onion and cook until tender, add artichokes, spinach, cream cheese, sour cream, Tabasco, salt, and cheese: cook until heated through. Pour into 1/2 quart casserole dish. Sprinkle remaining cheese on top. Place in oven until cheese is slightly brown. Remove and serve immediately with corn chips.
