3 ripe bananas
1&1/2 cups sugar
2 eggs (beaten)
3/4 tsp Bicarbonate
1/2 stick melted marg or butter
2&1/2 cups flour
1&1/2 tsp Baking powder
1/4 tsp of each cinnamon,nutmeg, and salt
1 cup chopped walnuts

Because I hate having anything to do with a over ripe banana I put them in my mixer bowl with the sugar and let the machine do the mashing. Add the marg and well beaten eggs. Add SIFTED dry ingredients and mix well. Lastly add the walnuts.
Pour into large loaf pan, or small gift size pans and bake in moderate oven 375º 1-11/4 hrs for large pan or 30 mins+- for small loaf pans. If large loaf pans are getting too brown on top cover with foil
