Chicken Delight Recipe

8 Thin cut boneless chicken breasts
2 bunches green onions
8 oz. sliced mushrooms
1/4 lb. butter (not margarine)
1 1/2 pints heavy whipping cream
1/2 can beef broth
1/2 cup Vermouth
lemon juice

Directions:
Directions:
Saute sliced green onion and mushrooms in butter until tender.

Remove from pan and insert chicken breasts. Squeeze a small amount of lemon juice on top of breasts. Cover and cook on high until slightly browned on both sides.

Remove chicken, put in covered baking dish in a 325 degree oven for approximately 20 minutes.

Put the mushrooms and onion, beef broth and vermouth into the pan you browned the chicken in, cook on high until mixture becomes syrupy,

Add about 1/4 cup whipping cream at a time to above mixture, cooking on high and stirring constantly until mixture thickens. Continue this until all the whipping cream is used up.

The chicken will have some drippings while in the oven. Add this to the above mixture again cooking until mixture is thickened.

Serve with Rice Pilaf, pouring just a little of the mixture over chicken, serving the mixture as gravy for the chicken and rice.
