Mexican Chicken Recipe

1 1/2 lbs. cooked chicken, chopped or shredded
1 pkg. cheese nachos (I use Doritos)
1 can cream of chicken soup
1 can cream of mushroom soup
2 cans Rotel tomatoes
1 onion
1 green pepper
1/2 stick butter or margarine
cheddar cheese, shredded

Directions:
Directions:
Saute onion and green pepper in butter. Add soups and tomatoes. Stir well. Let simmer until soups are heated and mixed together, stirring occasionally, add chicken.

Crush nachos and pour into bottom of 9x13 pan. Carefully pour chicken mixture over nachos. Top with shredded cheese. Bake at 350º until hot and cheese has melted.

The nachos can get soggy if there are leftovers, so I like to just serve the chicken mixture hot from the stove, over crushed nachos and top with shredded cheese.
