1 C. light cream
1/4 tsp. kosher salt
1/2 lb. cooked orzo pasta
1 C. diced tomato
1/2 C. fresh basil pesto
1/2 tsp. red wine vinegar
1/4 C. grated parmesan cheese
Directions:
Directions:
Heat a large pan, and add the cream. Bring to a simmer, and mix in the salt and cooked orzo. Lower heat to medium, stir in the diced tomatoes, and cook until warm. Remove pan from heat, and stir in the pesto, vinegar and cheese. Serves 4.
