5-6 ears of corn
diced red onion
3 T cider vinegar
3 T good olive oil
Kosher salt
Black pepper
fresh basil
cut up avocado
cherry or small roma tomatoes cut in 1/2

Directions:
Directions:
Cook corn in boiling water for about 3 minutes until no longer starchy. Drain and immerse in cold water to stop cooking. When cool, cut kernals off cob.
Toss kernels in large bowl with onions, avocado, tomatoes, vinegar, olive oil, salt and pepper. Just before serving, toss in fresh basil and serve cold.

(i have been known to play with this recipe according to taste and believe that other veggies may be added if wanted. Adding more dressing is not unheard of either.
