4 med. yellow squash, cut in 1/4 in. slices
2 med. zucchini, cut in 1/4 in. slices
1-1/2 c. water
1-1/2 c. chopped onion
1 stick butter, melted
2 large eggs, beaten
1-1/2 c. Panko, or regular bread crumbs
1-1/2 c. grated cheddar cheese
10 slices American cheese

Directions:
Directions:
Preheat oven to 300º. Grease 9x13 baking dish.
Put yellow squash & zucchini & water in large pot over med. heat. Cook 20 min. or until tender. Drain.
Meanwhile, saute onion in melted butter.
In a large mixing bowl, combine squash and sautéed onion.
Beat eggs to blend and pour into vegetables. Add crumbs and cheddar cheese. Mix well. Pour into prepared baking dish. Top with American cheese slices. Bake 15-20 minutes or until top is browned.
