1&1/2 cups all purpose flour
3/4 tsp salt
3 large eggs
1&1/2 cups milk
4 Tblsp unsalted butter

Directions:
Directions:
In a large bowl mix flour and salt; make well in center. In another bowl beat eggs and milk, then pour into well gradually stir egg mixture into the flour until consistency of heavy cream yet slightly lumpy: do not overbeat. allow to rest 30 to 60 mins.
Preheat oven to 425º. Place 1 tsp butter in each cup of 12 cup muffin tin or two six cup popover tins. Heat in oven until butter melts about 1 min Divide amoung cups about three quarters full.
Bake until popovers are puffed and golden brown about twenty mins. Turn out popovers and serve warm.
