2 cup self rising flour
1/4 cup shortening
About 2/3 cup milk *

Heat oven to 475º
Sift Flour in large bowl and add shortening and cut in until all particles are as fine as coarse meal.

Add milk and mix quickly with a fork.

Turn dough out on lightly floured board or pastry cloth. Roll out and cut into biscuits with floured cutter. Place on a baking sheet and bake 10 - 12 minutes.

* For buttermilk biscuits substitute 3/4 cup buttermilk for milk and add 1/4 tsp soda.
