1&1/2 lb. boneless, skinless chicken (thighs work great here)
1 c. cornflake crumbs
1 tsp. paprika
1/2 tsp. Italian seasoning
1/2 tsp. garlic powder
1/2 tsp. onion powder

Directions:
Directions:
Cut chicken into nugget size pieces. Place cornflakes into a plastic bag and crush using a rolling pin, add remaining ingredients to crushed flakes. Close bag tightly and shake until blended. Add a few pieces of chicken at a time to crumb mix and shake to coat evenly.
Preheat oven to 400 lightly grease cookie sheet.
Place chicken on sheet and bake until golden brown about 12-14 minutes.
