2.5 lbs small potatoes
1 tbsp. minced garlic
1 tsp. pepper
1/2 tsp. salt
1/2 tsp. dry mustard
2 tbsp. olive oil
1 tbsp. herbs (any combination of rosemary, oregano, and parsley)
2 tbsp. Balsamic vinegar

Directions:
Preheat oven to 425 degrees. Wash potatoes, cutting the larger ones in half. Par-boil them either in the microwave or in a pot of boiling water on the stove until just tender. Drain completely. Meanwhile, mix together all remaining ingredients except the Balsamic vinegar. When potatoes have been drained, add this mixture to the hot potatoes. Turn out onto a sprayed or lightly greased baking tray. Spread evenly. Do not cover. Roast about 30 minutes or until golden brown and crispy, turning once or twice. When done, remove from oven and immediately toss potatoes with Balsamic vinegar. It should sizzle as it hits the hot pan and be absorbed into the potatoes. Serve at once.
