1 pound ground sausage
24 eggs, beaten
1 (4 ounce) can chopped green chiles, drained
½ small onion, chopped or 3 green onions, chopped
2 teaspoons garlic powder
¼ teaspoon dry mustard
salt and pepper to taste
Grated cheese

Directions:
Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease muffin cups with Pam. Cook sausage. Drain and set aside. Combine eggs, chiles, onion, garlic powder, dry mustard, salt and pepper; mix well. Place a pinch of cheese in the bottom of the muffin cup (enough to cover bottom, about 1 Tbsp). Add sausage (1-2 Tbsp). Pour in egg mixture to fill cup about ¾ full.

Bake in preheated oven for 15 to 20 minutes, until egg has set and a toothpick inserted into each 'muffin' comes out clean.

Makes 24 muffins.
