2 lbs. lean ground beef
2 eggs, slightly beaten
1 tsp. salt
1/4 tsp. pepper
1/3 C. fresh bread crumbs
3 Tbsp. butter
1 1/2 C. sliced fresh mushrooms or sliced onion
1 Tbsp. vegetable oil
1 1/3 C. beef broth
2 Tbsp. flour
Chopped parsley

Combine beef, eggs, salt and pepper in a mixing bowl. Stir with a fork only to mix. Shape into 6 oval patties about 1/2 inch thick and 5 inches long. Sprinkle both sides with bread crumbs and press into the patties; roll in bread crumbs again; chill in the refrigerator. Melt 2 Tbsp. Butter into a heavy skillet; add mushrooms or onions and sauté, stirring occasionally, over medium heat 3 to 4 minutes. Remove from skillet. Reheat skillet; add oil and remaining butter; add patties and panfry until browned and crisp on surface, about 5 minutes per side. Remove to a hot platter. Add broth to pan drippings. Blend flour with a small amount of water to a smooth paste; add to skillet and bring to a boil; stirring until smooth and thickened. Add mushrooms/ onions and stir. Add patties and simmer in gravy to desired doneness, about 3 minutes for medium. Serve patties with gravy. Garnish with parsley. Serves 6.
