2 pounds yellow crookneck squash, thinly sliced
1/4 cup light or fat-free mayonnaise
1/4 cup Egg Beaters egg substitute
3/4 cup shredded reduced-fat sharp
cheddar cheese, divided

Directions:
Directions:
In Dutch oven, cover squash with water and heat until water boils. Cook 8 to 10 minutes or just until squash is tender. Drain well in wire mesh strainer and gently press out liquid with fingers. Preheat oven to 350 degrees. Return squash to Dutch oven, add 1/2 cup cheese, mayonnaise and egg substitute and mix well. Season to taste with salt substitute and pepper. Spoon into sprayed 1 1/2 to 2 quart baking dish. Sprinkle with remaining 1/4 cup cheese.

Bake uncovered about 30 minutes. Food exchanges: 1 fat, 1/2 vegetable. From my friend Linda Howard, low in fat and carbs, but not taste!
