1 stick butter (room temperature)
4 eggs
4 tbsp. lemon juice
Salt (to taste)
Red pepper (to taste)

Directions:
Directions:
Put ingredients in a double boiler over slow, simmering water. Beat constantly with whisk until it thickens.

Serve over Eggs Benedict, or serve over fresh vegetables like broccoli and asparagus to make them divinely sinful!

Will not curdle and can be stored in the refrigerator. My daughter, Nancy, makes Hollandaise in the blender (due to the generation gap) and hers is easier and better!
