2 1/2 to 3lbs skirt or flank steak
1 cup soy soy sauce
1 cup sugar*
2 inches fresh ginger, sliced with skin attached
1 tbsp minced garlic
1 tbsp Sambal chili garlic paste (in the Asian aisle of your grocery store)
1/2 tsp sesame oil

Directions:
Directions:
Start the marinade by combining soy sauce and sugar* in a pan over medium high heat. Add ginger, garlic and Sambal. Bring the mixture to boil before lowering the heat to simmer the sauce until it reaches a syrup-like consistency. Add sesame oil and sesame seeds last before removing from heat. Once sauce is cool, pour most of it over the steak to marinate for at least 8h (l prefer 1-2 days).

Grill for 20 to 30 minutes.
