1 lb dark chocolate, chopped in small pieces
4 oz unsalted butter
1 cup heavy cream
2 tsp vanilla (or 2 oz rum, 2 tbsp Kahlua
or 2 tsp mint extract)

Line loaf pan with plastic wrap. Let wrap hang over the sides. Bring cream and butter to a simmer over medium heat. then decrease to low heat and add chocolate. Stir until smooth and shiny. Remove from heat and stir in vanilla (or alternatives for different styles). Pour into pan and chill overnight.

Remove from refrigerator immediately before slicing thinly using a wet knife.
