1 1/2 c. sugar
2 heaping Tbsp Cornstarch
3 c. rhubarb cut up
1/4 c. water
1 tsp. vanilla
1 1/2 c. quick cooking oatmeal
1 c. brown sugar
1 c. butter (room temp.)
1 1/2 c. flour
1/2 tsp. baking soda

Directions:
Directions:
In a saucepan mix sugar, cornstarch, rhubarb and water. Cook until thick, add vanilla. In separate bowl mix oatmeal, sugar, butter, flour and baking soda.
Sprinke 3/4 mixture into 9x13 pan, pour rhubarb mixture over and top with remaining crumbs.
Bake at 375º for 30 to 35 min.
