5 medium baking potatoes 1 stick butter
1/4-1/2 cup half & half cream 1 teaspoon salt
1/4 teaspoon pepper 1/2 cup shredded mild cheese

Directions:
Scrub potatoes, dry and pierce. Bake without foil at 450 degrees for about 1 hour on oven rack. Melt butter and sauté onion until clear and tender. Cut a lengthwise slice from top of each potato, scoop out pulp. Mash pulp with cream, salt, pepper, and sautéed onions with butter until fluffy in consistency. Fill reserved shells with the mixture and top with shredded cheese. Potatoes may now be refrigerated or frozen until ready for use. Bake at 350 degrees for 15 to 20 minutes (longer if frozen).
