1/4 c. oil
2 medium onions, sliced
3 cloves garlic, minced
3 medium tomatoes
2 small zucchini
1 medium eggplant
1 large green pepper
1/2 lb. mushrooms, sliced
2 Tbsp. fresh parsley, chopped
1 tsp. salt
3/4 tsp. dried basil
3/4 tsp. dried oregano
1/8 tsp. pepper
1/4 c. Parmesan cheese, grated
1/4 c. white wine (if desired)

1. Peel and cut tomatoes into 1 1/2 inch chunks. Cut zucchini into 1/2 inch slices, cut eggplant into 1 inch cubes and green pepper into 1/4 inch strips.

2. In 12-inch skillet over medium-high heat, heat oil until hot. Add onions and garlic; cook until tender. Stir in tomatoes and remaining ingredients except cheese, mushrooms and wine; bring to a boil. Reduce heat to medium. Cover and cook, stirring occasionally, 15 minutes or until vegetables are tender.

3. Stir in mushrooms and wine. Cook, uncovered, 5 minutes; add cheese and cook about 5 minutes more or until cheese melts and sauce is slightly thickened. May be topped with sour cream.
