1 egg
1 1/2 cups sugar
1 teaspoon baking soda
2 1/4 cups flour
1 teaspoon vanilla
1/2 cup butter or margarine
1 1/2 cups thinly sliced rhubarb (can add more)
1 cup sour milk (you can add 1 tablespoon lemon juice or vinegar to milk = 1 cup total to sour it)

1/2 cup sugar
1 teaspoon cinnamon

Directions:
Directions:
Cream 1 cup of the sugar and the margarine. Add the egg and vanilla. Add the soda to sour milk, then add to mixture. Roll rhubarb in the remaining 1/2 cup sugar (or more sugar if you use more rhubarb) and then add alternately with the flour to mixture. Pour into 9 x 13 cake pan and top with 1/2 cup sugar and 1 teaspoon cinnamon. Bake at 350 F for 30 minutes.
