2 cans Costco canned chicken meat, drained
4 pieces of celery fine, consistent chop
½ Slivered red onion
Dijon mustard
1 tbsp. mayonnaise
¼ cup dried cranberries
¼ c pine nuts, slivered almonds
Lemon zest, sparingly
S&P to taste

Directions:
Directions:
Add drained chicken breast to medium size bowl, shred to bite size pieces. Add celery, onions, pine nuts or slivered almonds, cranberries to chicken. Add lemon zest, mayonnaise and Dijon or spicy mustard to chicken to bind contents of salad to moist, but not heavy on mayonnaise! Add salt and pepper, as desired. Chill for at least an hour. Serve with your favorite cracker or pita chip as an appetizer.
