2-3 sweet potatoes
3 large eggs, lightly beaten
3/4 cups non dairy creamer
2 tablespoons melted margarine
1/2 cup light brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1 graham cracker pie crust

1/2 cup cornflake crumbs
3 tablespoons softened margarine
3 tablespoons brown sugar

Directions:
Directions:
Preheat oven to 450º Peel and cut sweet potatoes. Cook in water until soft, drain. Combine sweet potatoes, eggs, nondairy creamer, 2 tablespoons margarine, light brown sugar, cinnamon and salt. Mix with electric mixer until well blended. Pour into pie crust. Combine all topping ingredients and spread over top. Bake on 450º for 10 minutes and then at 350º for 45 minutes.
