2 sticks unsalted butter ( I stick melted, ½ stick softened)
1 c. packed brown sugar
2 large eggs, room temp, beaten
1 c. powdered sugar
1 c. canned pumpkin
1 T. pumpkin pie spice
1 ½ tsp vanilla
1 tsp baking powder
1 tsp baking soda
¾ tsp & 2 pinches salt
1 2/3 c. flour
4 oz cream cheese

Directions:
Directions:
Preheat oven to 350 degrees. Line 2 baking sheets w/ parchment paper.
Mix melted butter & brown sugar. Whisk in eggs, canned pumpkin, pumpkin spice, 1 tsp vanilla, baking powder, soda, and ¾ tsp salt. Use rubber spatula to fold in flour.
Scoop on baking sheet, bake 10 min, cool on rack.

Frosting:
Mix softened butter, cream cheese. Add powdered sugar, 2 pinches salt, and ½ tsp vanilla.

Place filling between 2 cookies.
