1/4 c Monterey Jack, Cheddar or Swiss Cheese shredded
1- 8 inch tortilla
1- small green pepper chopped about 1/4 c
1- small onion, chopped about 1/4 c
1- small tomato, diced about 1/4 c
1 Tbsp. or more of Salsa

Directions:

Preheat oven to 350º
Place tortilla shell on a lightly greased cookie sheet, sprinkle with veggies & salsa
Fold in half
Heat in oven to melt cheese
Cut into 3 triangles

May use any veggies of choice, some suggestions include mushrooms, grated carrots, shredded zucchini, yellow squash, or jalapeno peppers.
