1/2 c sugar
1 c dried cherries
2 tsp lemon zest
1/3 c lemon juice
1/2 tsp cinnamon
1/2 tsp allspice
5 c chopped and peeled pears

Directions:
Directions:
In a large sauce pan, combine all of the ingredients but the pears. Bring to a boil and reduce heat to medium. Simmer for 5 minutes, and stir in pears. Return to a boil and simmer until the pears are just tender, about 5 minutes. Let cool.

This makes a lot. It stores well in the refrigerator for up to 2 weeks. I've never tried freezing it, but that would work as well. Perfect with chicken or pork and stirs into salads well too.
