6 potatoes, peeled and chopped 12 oz. evaporated milk
4-6 green onions, finely chopped 1/2 c. margarine
2-4 stalks celery, finely chopped 2 tsp. parsely flakes
2-2 1/2 c. water
1/2 tsp. salt
1/2 tsp. pepper
1/3 to 1/4 lb. Velveeta

Directions:
Directions:
Cook potatoes, onions, celery, salt, pepper in water until tender.
Mash slightly. Stir in milk, butter, cheese and parsely flakes.

You can add a can of chopped green chilis for the celery and use Mexican
