1 lb pork sausage (mild, sweet or hot, your preference)
1 medium yellow onion, finely diced
2 ribs celery, finely diced
2 T. poultry seasoning
2 C. chicken stock
1 bag of stuffing croutons (the ones you see all over the place around thanksgiving. I think they are a pound, but not sure. Not salad ones. Any flavor is good.) If you are going canna-enhanced, use a batch of canna-croutons made from one standard sized loaf of bread. Not the jumbo loaf of soft white size, makes too many croutons. But you can get as creative as you want so long as you keep the croutons small.

Brown the sausage, breaking up into small bits and remove
saute onion and celery in fond
deglaze with the stock
toss with croutons, poultry seasoning, and removed sausage till well mixed.
Can be served as is after standing for about 10-15 min, but is much much tastier stuffed into meat and baked, or baked in it's own dish for 30 min or so at 350 degrees
