1/4 C. sugar
4 t. AP flour
Additional flour, for dusting
1/4 t. nutmeg
1 T. lemon juice (fresh, bottled, or powdered)
3 C. (about 1 1/2 lb) peaches, peeled and sliced
1 egg, beaten with 1 T. water
1 pie crust, homemade or store bought

Directions:
Directions:
Mix the sugar, 4 t. flour, nutmeg, lemon juice, and peaches together, and set aside
Roll crust out to about 14 x 11"
Dust a cookie sheet with flour (even better if you use parchment paper too)
Lay the crust out onto the cookie sheet
Pile the peaches up into the center of the crust
Pinch the edges up by 2" or so all around the edges
Brush with egg wash (you can sprinkle with sugar too if you wish)
Bake at 375 degrees for 40-45 minutes, till golden and bubbly around the juicy edges where the slumped peaches meet the crust.
Allow to cool before serving.
