4 tbsp. butter
6 tbsp. flour
1 cup evaporated milk
1 cup Cheddar cheese, shredded
6 eggs, separated
1 tsp. salt

Wrap greased aluminum foil collar around edge of lightly greased 2-quart souffle dish. Melt butter in saucepan. Slowly stir in flour until smooth. Gradually stir in evaporated milk; simmer, stirring constantly, until thickened. Add cheese, well-beaten egg yolks and salt. Cook over low heat until cheese melts and the mixture is smooth. Cool about 30 minutes. While it's cooling, beat egg whites until stiff. Once cheese mixture is cooled, fold in egg whites. Pour into souffle dish. Bake at 350º for 30 minutes. Remove collar and serve immediately.

This was one of granddaughter Shannon's beach favorites! Her daily lunch request was for the souffle or grilled cheese sandwiches. Hers was the only vote and I LOVED it!

Oh how I have come a long way from calling my Mother to ask her, "Which is the yolk of an egg?". She told me and added, "Now, honey, don't tell anyone you asked me that, and I won't either!"
