2 cups chopped onions
1 tablespoon grated fresh ginger
1/2 tablespoon grated garlic
6-8 tablespoons oil
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cloves
1/2 teaspoon turmeric (optional)
1/2 teaspoon ground cinnamon
1 tablespoon ground coriander
1 teaspoon ground cumin
2 large tomatoes, chopped
1 tablespoon chopped fresh coriander leaves
1/2 teaspoon salt
pinch of sugar
2 (15 ounce) cans of large chick peas (garbanzo beans), drained

Directions:
Directions:
Saute onions, ginger, and garlic in oil until they are light brown. (I use less oil and substitute water to make it healthier). Add spices and stir fry until they are fragrant, If onions and spices stick to pan add small amounts of water. Add tomatoes and coriander leaves. When tomatoes are soft, add salt, sugar and chick peas. Simmer 10 minutes, adding a little water if necessary.
