l large roasting chicken quartered
1juice of a sour orange.or lemon or lime
1 tsp. salt
3 garlic cloves-mashed
1/2 cup dry white cooking wine
1 onion, chopped
1 laurel (bay) leaf
3 tbsp. vegetable oil
1/8 tsp black pepper.

Directions:
Directions:
Marinate chicken with salt, the citrus juice and the mashed garlic for several hours. Drain but reserve the marinade and then sautee the chicken to brown in the oil. Add the white cooking wine, bay leaf, onion, pepper and the left over marinade.

Cook at a lower temperature, turning over often to make sure all of the chicken cooks evenly, until done. Chicken juices should run clear when you prick it with a fork.

You can also cook this dish with the chicken whole. Quartered potatoes can be added about half way thru the cooking process.
