3 tbsp. vegetable oil
1/2 of a Spanish chorizo
2 inch cube of salt pork
3 cloves of garlic
1 medium onion
1/4 green pepper
1 cup long grain rice
1 can (15oz) red kidney beans
11/2 cups of water
1 packet of Sazon goya
salt to taste

chop the onions and peppers and set aside. Chop the garlic and set aside (alone) In Dutch oven heat the oil on medium -high heat. Add the salt pork and chorizo cut into little pieces. Saute until browned. Add the chopped onion and peppers and continue to saute until onions are translucent. Add the chopped garlic, the Suzan and saute but don't let the garlic brown. Add the rice, stir well and add the can of red beans and the water. Bring to a boil and allow to cook uncovered until the water level is almost at rice/bean level. Lower the heat to the low setting and cover. Continue to cook at low heat for about 20 minutes or until rice is tender.
