1 clove of garlic finely chopped
1 onion chopped
1 green pepper chopped
1 celery stick chopped
1 medium grated carrot
1 28 ounce can of diced tomatoes (or approx 3.5 cups of freshly diced tomatoes)
1 20 ounce can of red kidney beans
2 cans (4 ounce) chopped green chilies
¼ cup bulgur wheat
2 teaspoons of Chili Powder
1 teaspoon Basil
1 teaspoon lemon juice
½ teaspoon Oregano
½ to 1 teaspoon of red pepper (to taste)

Directions:
Directions:
Place a small amount of olive oil in the bottom of large pan. Add garlic, onion, green pepper, celery and carrot and cook until vegetables begin to soften and slightly brown. Add all remaining ingredients except for bulgur and heat until chili begins to bubble. Turn down to a simmer and add bulgur wheat and cook for at least 20 minutes until bulgur is cooked.
