250g Butter (soft at room temp)
100g Golden Caster Sugar
1 teaspoon of Vanilla extract
Pinch of salt
200g of flour
70g of Semolina

Directions:
Directions:
Preheat oven to 180 degrees C

Blend Butter and sugar together until soft and pale. Add vanilla extract.
Mix in the flour and semolina until a dough is formed.

Place in the centre of baking parchment and use another piece of parchment on top to roll out the dough.

Cut shapes out of the rolled dough (squares, diamonds or rectangles using a knife or cookie/pastry cutter) and place on a lined baking tray.

Place in oven for 10-12 minutes.

Remove from oven and remove baking sheet onto a cooling rack and sprinkle with caster sugar whilst hot. Then leave to cool.
