3-4 tomatoes
1/4 tsp Kosher salt
1/4 tsp fresh ground pepper
2-3 T chopped fresh basil
2-3 c grated extra sharp white Cheddar cheese
Olive oil to taste

Directions:
Directions:
Preheat oven to 375º.
Rub olive oil on bottom of 13x9 rectangular glass baking dish. Slice tomatoes in 1/4 slices and place in a single layer in the baking dish. Top tomatoes with salt, pepper, and fresh basil. Cover each tomato slice completely with grated cheddar cheese. Drizzle olive oil lightly on top of cheese. Bake for 20-25 minutes, until cheese is bubbling.
