1 1/2 cups grated Monterey Jack cheese
5 cups water
4 chicken breasts
2 (15 oz) cans white hominy beans (drained)
2 (14 oz) stewed tomatoes
4 teaspoon dried oregano
1 jalapeņo; seeded and minced dash of hot sauce
1 1/2 cup shredded lettuce
3/4 cup radishes
3/4 cup green onions

Directions:
Directions:
Bring water to boil in large sauce pan. Add chicken, cover and simmer until cooked. Remove chicken; keep cooking water. Shred chicken; put aside. Add hominy, stewed tomatoes, oregano, jalapeņo and hot sauce to cooking water bring to a boil, then simmer until slightly thickened, stirring often for 1 hour.

Add chicken, season with salt, pepper and hot sauce. Serve in bowls with lettuce, radishes, green onions add posole top with Monterey jack cheese and cilantro.
