3/4 cup sugar
1 and 3/4 cups warm water
2 and 1/2 packets of active dry yeast
6 and 1/2 cups of unbleached all purpose flour
2 teaspoons of salt
1/4 cup melted lard [Crisco works best for me]

Directions:
Directions:
Dissolve 1 tablespoon of sugar into the water in a small bowl
Sprinkle the yeast over the water; let stand 5 minutes until the yeast begins to form a creamy foam.
In a separate bowl, mix the flour, the remaining sugar, and salt together
Once the yeast has foamed, stir the melted lard into the yeast., then stir the yeast mixture into the flour until a sticky dough forms.
Turn the dough out onto a lightly-floured surface and knead until smooth and elastic, about 10 minutes. (You may need to add additional flour to keep the dough from sticking to the counter surface)
Once the dough starts drawing back onto itself, cover the dough with a kitchen towel and allow to rest for 15 minutes
Lightly grease a baking sheet with lard
Cut the dough into three equal sections, then cut each section into eight pieces
Form into balls and place onto the prepared baking sheet
Again, cover the balls with a kitchen towel and let them rest, until they have doubled in size (approximately 45 minutes)

Preheat oven to 325 degrees F
Bake for approximately one hour or until tops are golden brown
Allow to cool
