1 cup coarsely chopped walnuts
1 and 3/4 cups all purpose flour
3/4 cup sugar [white]
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 large eggs, lightly beaten
1/2 cup unsalted butter [melted and cooled]
3 large ripe bananas

Preheat oven to 350 degrees

Place walnuts on a baking sheet and bake on the middle rack for 5 minutes until toasted
In a bowl mix together flour, sugar, baking powder, baking soda, cinnamon and nuts
In a separate bowl mash the ripe bananas, add the eggs, melted butter and vanilla.
Lightly fold the banana mixture with the flour mixture. Do not over mix, you want the
Consistency to be chunky.
Place the chunky batter into a loaf pan, which has been sprayed lightly with non-stick spray
Or you can use the conventional method of lightly buttering the pan and sprinkling flour into it.
If you do the later make sure you lightly tap out any excess flour that has not adhered to the butter.

Bake approximately 50 minutes or until golden brown. I would recommend the toothpick test in the
Very center of the golden loaf.

Let cool slightly. Great warm with a scoop of vanilla ice cream!
