1/4 c. oil
2 large onions
4 carrots, sliced
4 potatoes, sliced
1 green pepper, diced
4 celery ribs, sliced
2 zucchini, sliced
1 c. rice
1 (16 oz) can stewed tomatoes
2 bay leaves
Salt and pepper

Directions:
Directions:
1. Saute onions in 1/4 c. oil. When soft, add remaining vegetables. Cook on high for 15 minutes, stirring constantly.

2. Add rice, stewed tomatoes, salt, pepper, and bay leaves. Put into roasting pan; add water until vegetables are covered. Cook covered in 375F oven until done, about 1 hour.
