Barbecued Texas Beef Brisket Recipe

Dry Rub
1/2 c paprika
3 T ground pepper
3 T coarse salt
3 T sugar
2 T Chills powder
1 7 - 8 lb. beef Brisket

Mop
12 oz. beer
1/2 c cider vinegar
1/2 c water
1/2 c vegetable oil
2 T Worcestershire sauce
2 T Minced jalapeño chilies
1 c barbecue sauce
1 T chili powder

For Dry Rub

Mix first 5 ingredients in small bowl. Transfer 1 T dry rub to another bowl; reserve for mop. Spread remaining dry rub all over brisket. Cover and chill overnight.


For Mop

Mix first 6 ingredients plus reserved rub in heavy medium. Stir over low heat 5 mins.. Pour 1/2 c into bowl. Cover and chill for use in sauce. Cover and chill remaining mop

Place brisket in oven at 225º Cover and cook for 10 hr.. Brush brisket frequently with mop while cooking. Transfer brisket to platter and let stand for 15 mins.. Combine barbecue sauce and chili powder in saucepan. Add ant juices from brisket; bring to boil, thinning with some of reserved mop. Thinly slice brisket and serve with sauce.
