2 lbs pork sausage
1 onion chopped
1 green bell pepper chopped
2 (10 oz) cans diced tomatoes and green chilies
2 c seasoned bread crumbs
4 c shredded Mexican blend cheese ( divided 3-1)
6 large eggs
2 c milk
1 t salt
1 t pepper

I prepare this the day before I am going to need it and let it stand in the refrig overnight. Cook sausage in large skillet until no longer pink, drain and return to skillet. Add onion and bell pepper to meat and saute over med heat until veggies are tender. Stir in tomatoes and green chilies, reduce heat and simmer 10 min. Layer half of bread crumbs, sausage mixture and cheese in lightly greased pan. Repeat layers. Whisk together eggs, milk, salt and pepper. Pour over layers in baking dish. Top with additional cheese. Cover and chill overnight. Bake lightly covered with aluminum foil at 350º for 1 hour or until golden and bubbly.
