1/4 cup firmly packed brown sugar
1/4 cup butter
3/4 cup confectioners sugar
1/2 cup creamy peanut butter
1/2 cup finely chopped honey roasted peanuts
1 tsp. vanilla extract
2 (6oz.) packages bittersweet baking chocolate, chopped
2 tbsp. butter-flavored shortening
Garnish: assorted candy melts, melted

In a microwave-safe bowl, microwave brown sugar and butter on high in 30 second intervals, stirring between each, until brown sugar is melted (about 1 to 1 1/2 minutes total). Stir in confectioners sugar, peanut butter, peanuts and vanilla. Cover with plastic wrap and refrigerate for 1 hour. Shape mixture by teaspoonfuls into egg shapes; refrigerate for 30 minutes. In a small saucepan, melt chocolate and shortening over low heat, whisking until smooth. Cool slightly. Using the tines of two forks, roll egg in chocolate to coat. Place chocolate eggs on parchment paper to dry. Drizzle with assorted melted candy melts, if desired.
