1/4 cup firmly packed dark brown sugar
1 cup plus 2 tbsp. heavy whipping cream, divided
1 tbsp. butter
2 egg yolks
2 tbsp. apple schnapps
1 tbsp. sugar
2 (2oz.) squares white chocolate, melted and cooled
1 (21oz.) can apple pie filling
Garnish: whipped cream, chopped pecans, caramel sauce

Directions:
Directions:
In a small saucepan, combine brown sugar, 2 tbsp. cream, and butter; cook over medium heat, stirring frequently ,until slightly thickened, about 2 minutes. Set aside to cool slightly. In the top of a double boiler, whisk together egg yolks, schnapps, and sugar. Set pan over simmering water and cook, whisking constantly until mixture is thickened and coats the back of a wooden spoon about 4-5 minutes. Remove from heat and cool. In a medium bowl, beat remaining 1 cup cream at medium high speed with and electric mixer until medium peaks form; fold into cooled egg mixture. Gently fold in melted chocolate. To serve, evenly layer apple pie filling, browns sugar mixture, and mousse in 2 individual serving dishes. Chill for 30 minutes. Garnish with whipped cream, pecans, and caramel sauce if desired. Serve immediately.
